Hi Sylvia, there are so many conflicting studies being done. Personally, I don’t let my food touch aluminum at all. I have switched to ceramic baking dishes and pans, and do still use my Calphalon cake pans with liners. Many times the aluminum in pans is on the inside for heat conduction, and doesn’t touch the food, so I make exceptions there too. I will do further study so that I can write a future definitive post. This is a great question!

I was wondering whether it’s still safe to bake in any cake tins made from aluminised steel or that are silver anodised which are lined with baking paper. Does the baking paper provide adequate/any protection?
